Lentil Walnut Burgers

 

Loved by my kids, these burgers are a weekly must have my in house. Walnuts give healthy omega fats and the lentils add protein and iron!

3/4 cup of lentils
1 cup of walnuts lightly toasted in the oven
2 cloves of garlic
2 heaping teaspoons of cumin
2 heaping teaspoons of coriander
1/3 cup of breadcrumbs
Salt and pepper to taste

In a pot, cover lentils with water and cook over medium heat for 30-40 min or until soft and cooked. While lentils are cooking, blend all the other ingredients in the food processor. Once lentils are cooked, drain very well and remove any exess water with paper towel. Add to the food processor and lightly process until smooth but some lentils are still formed. Move mixture into a bowl, make into patties (yields 4-6), fry with olive oil and brown both sides. Serve on a bun with all your favorite condiments! I personally love ketchup, mustard, green olives, lettuce and tomato.

*Soak lentils for an hour to improve digestion.
*You can also bake them in oven.
