North African Cauliflower 



Try this easy recipe to upgrade your roasted cauliflower!

1 Head of Cauliflower, cut into florets

1/4 cup Olive Oil

1/2 Teaspoon Sea Salt

1/4 Cup Blanched Slivered Almonds 

1/4 Cup Golden Raisins

1/2 Teaspoon Harissa (I used Frontier Coop)

1/2 Teaspoon Cumin

A few Dashes of Coconut Aminos 

2 Tablespoons of Chopped Parsley 

Pre heat oven to 450 degrees. While the oven is heating up, toss cauliflower evenly on a large baking sheet with half of the olive oil and lightly sprinkle with sea salt. When the oven is ready,  roast cauliflower for 15 to 20 min until tender and golden around the edges. Remove from oven and set aside.

Place the almonds evenly in a dry skillet over medium heat. Cook, shaking the skillet from time to time, stirring with a wooden spoon and turning the pieces around until the almonds are golden brown and aromatic. Once they are lightly browned, transfer to a plate to cool off.

In the same pan, heat remaining oil and add spices and golden raisin, stir for about 5 min until fragrant and raisins plump. Add in almonds, then move to a large mixing bowl and add roasted Cauliflower and stir to coat. Add a few dashes of Coconut Aminos and and garnish with chopped parsley.
