Creamy Spinach Dip

Try this easy recipe for a perfect snack that is kid approved!



1 Cup of Raw Cashews, soaked for at least 20 min

1/2 Cup of Plain Non-Dairy Milk

2 Tablespoons of Lemon Juice

1/2 Teaspoon Apple Cider Vinegar

3/4 Teaspoon Garlic Powder

3/4 Teaspoon Onion Powder

1/2 Teaspoon Salt

1 Cup Vegan Mayo

5 Scallions, Sliced

1 8oz Can of Water Chestnuts, Diced

1/4 Cup Red Bell Pepper

1 16 oz Bag of Frozen Chopped Spinach, thawed

Place all ingredients cashews - salt in a high powered blender and process until smooth. Add to a bowl and stir in remaining ingredients, mayo - spinach. Place in the fridge for an hour to set. Serve with fresh veggies and your favorite crackers!
