Scrambled Tofu

Every once in awhile, I feel compelled to whip up a vegan brunch spread. Although I usually steer clear of soy, brunch is just not complete without flavorful tofu scramble! Be sure to use a non-GMO- Organic brand like The Bridge.

4 TB Earth Balance
Half Onion Chopped
Half of Red Bell Pepper Chopped
1 Package of Bridge Organic Tofu Crumbled
1 Tablespoon Garlic Grandules
1 Tablespoon Onion Grandules
1 Teaspoon Turmeric
1/3 Cup of Nutritional Yeast Flakes
Salt and Pepper To Taste

Melt 3 tablespoons of the Earth Balance in skillet over medium heat. Add onion and bell pepper and cook for about 3-5 min. Add tofu, remaining 1 tablespoon of earth balance, onion & garlic grandules, and turmeric. Mix throughly over heat. Lastly add nutritional yeast and season with salt and pepper. Serve with biscuits or pancakes!
