Strawberry Shortcakes

Who loves Strawberry Shortcakes!? πŸ“ I’ve been taking full advantage of berry season and making all of our favorite summer treats. This shortcake recipe is so easy and they are just divine!! 

2 cups Sliced Strawberries
3 Tablespoons Agave Nectar
2 Tablespoons lemon juice

Shortcake Biscuits

1 1/4 Cups Flour
1 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
2 Tablespoons Earth Balance
1 6-oz. Vanilla Coconut Yogurt

Filling: Combine cut strawberries, agave, and lemon juice. Set aside.

Shortcakes: Preheat oven to 450Β°F. Stir together flour, baking powder, baking soda, and salt in bowl. Rub Earth Balance into flour mixture with hands until it resembles cornmeal. Add yogurt until soft dough forms. Form 8 biscuits with your hands and place on greased cookie sheet. Bake for 8-10 minutes. To serve, slice biscuits lengthwise and top with strawberries and with Vanilla Ice Cream!
