Granola Crusted French Toast
I looove French Toast and created this recipe after being inspired by restaurant in LA. The chia seeds give omega3's and granola adds a light crunch that is just perfect!
1 Cup coconut milk
1 Tablespoon chia seeds
1 Teaspoon cinnamon ( Use 1/2 Teaspoon if you like)
1/2 Teaspoon vanilla extract
1 cup Granola blended
French Loaf Cut into 12-14 Slices
Whisk coconut milk, chia seeds, cinnamon and vanilla in a bowl and set aside. In a powerful blender, like a Vita Mix, blend the granola for about 30-40 seconds. It should be powdered, but not to fine. Place into a bowl. Heat a non stick pan. Dip a piece of bread into the chia mixture, then coat both sides with the granola. Repeat with each slice to fill the pan. Cook on both sides for about 3-4 minutes. Serve with fresh fruit and maple syrup.
