New Years Cajun Hoppin’ John! 2



Black-eyed peas at meal time are custom on New Years day for good luck and prosperity! They also pack a decent dose of potassium and folate! Folate, a water soluble B vitamin, is essential for fetal cell formation. So if you’re expecting, eat up!

1 Tb Olive Oil
2 Tb earth balance
1 Teaspoon of paprika
1/2 Teaspoon on thyme
1/2 C of yellow onion
1/4 C Red Bell Pepper Diced
1cup of cooked black-eyed peas
1 cup of cooked rice
A few dashes of Liquid Smoke
Salt and pepper to taste

Heat olive oil and earth balance in a saucepan for several minutes. Add thyme and paprika, heat for a minute or so. Add yellow onion and red bell pepper and cook until soft. Add in rice, black-eyed peas, and dashes of liquid smoke and stir over heat. Season with salt and pepper to taste.

* Served with corn fritters and collards.
