Hearty Kale & Barley Stew


Barley is a healthy whole grain high in fiber and protein boasting numerous health benefits. When cooked, barley has a chewy texture and nutty flavor making it great for soups. Barley together with super kale make this simple, yet tasty stew a highly nutritional lunch or dinner option!

Ingredients
  1. 2 Tablespoons Olive Oil
  2. 1 Yellow Onion diced
  3. 3 Cloves of Garlic diced
  4. 3 Celery Stalks diced
  5. 1 Cup of Barley (soaked for an hour or overnight)
  6. 5 Cups of Veggie Broth
  7. 2 Teaspoon Oregano
  8. 1/2 Teaspoon Thyme
  9. 2 Cups of Chopped Kale
  10. 1 Teaspoon Miso
  11. Black Pepper to taste
Instructions
  1. In a soup pot, saute onion, garlic and celery in the olive oil for 3-5 minutes.
  2. Add broth, barley, oregano, and thyme and cook covered for about 20 min.
  3. Add in the kale and cook for another 10 min.
  4. Place miso in a small bowl and remove a small amount of broth and mix with the miso to thin it out.
  5. Add thinned paste and to soup stirring well to integrate.
  6. Remove from heat and serve with crusty bread.
